02 - In a large mixing bowl, combine the mashed bananas, eggs, oil or melted butter, yogurt or sour cream, granulated sugar, and vanilla extract. Whisk vigorously until the mixture is smooth and fully integrated.
03 - In a separate bowl, sift together the all-purpose flour, baking soda, salt, and ground cinnamon to ensure even distribution of leavening agents.
04 - Gently fold the dry ingredient mixture into the wet ingredients using a spatula. Mix only until the flour disappears—overmixing will result in a dense, tough bread.
05 - If desired, gently fold in the chopped nuts and/or chocolate chips until evenly distributed throughout the batter.
06 - Pour the batter into your prepared loaf pan. Use a spatula to smooth the top surface for even baking.
07 - Bake for 50 to 60 minutes. Check for doneness by inserting a toothpick into the center—it should come out clean or with just a few moist crumbs, never wet batter.
